Overview
Taste
Mild flavor of mustard, wasabi, light cabbage, mild citrus and pepper. Balanced bitterness and a touch of salt. The whole plant is edible.
Appearance
White, slightly greenish stem with green and purple leaves.
Origin
Originates from the Mediterranean and later came to Scandinavia.
Culinary use
Steak, sushi, sandwiches, dressings and dishes that need a kick.
How we grow it
Grown hydroponically in closed climate chambers — without soil and without pesticides. In stacked layers from floor to ceiling at our farm in Ringsted.

Keep refrigerated at 2–5 °C. Delivered living, so it stays fresh significantly longer than cut greens. Rinse only just before serving.
