Overview
Taste
Crisp cress flavor with notes of mustard and horseradish. Hints of white pepper and a touch of citrus. Light bitterness. The whole plant is edible.
Appearance
Red and greenish stem with round green leaves, at times tending to blue.
Origin
Originally from the Andes and Peru. Found in Scandinavia since the 17th century, adorning herb gardens for centuries.
Culinary use
Fish, salads, cold platters and as an elegant edible decoration.
How we grow it
Grown hydroponically in closed climate chambers — without soil and without pesticides. In stacked layers from floor to ceiling at our farm in Ringsted.

Keep refrigerated at 2–5 °C. Delivered living, so it stays fresh significantly longer than cut greens. Rinse only just before serving.
