Overview
Taste
Bold rocket flavor with notes of mustard, pepper, lemon and nuts. Balanced bitterness and light acidity. The whole plant is edible.
Appearance
Light green and white stem with vividly green leaves.
Origin
Originates from the Mediterranean and North Africa. In Europe known as the dandelion-like baby green rooted in Italian cuisine.
Culinary use
Pizza, pasta, carpaccio, salads and Italian classics.
How we grow it
Grown hydroponically in closed climate chambers — without soil and without pesticides. In stacked layers from floor to ceiling at our farm in Ringsted.

Keep refrigerated at 2–5 °C. Delivered living, so it stays fresh significantly longer than cut greens. Rinse only just before serving.
