Overview
Taste
Rich cabbage flavor with a sharp note of pepper and mustard. The whole plant is edible, both stem and leaf.
Appearance
Green and white stems, curved serrated leaves in deep green and purple tones.
Origin
Japanese baby leaf from the brassica family, presumably originating in China. Cold-tolerant and well suited to the Nordics.
Culinary use
Asian salads, ramen, poké bowls and as a colorful garnish.
How we grow it
Grown hydroponically in closed climate chambers — without soil and without pesticides. In stacked layers from floor to ceiling at our farm in Ringsted.

Keep refrigerated at 2–5 °C. Delivered living, so it stays fresh significantly longer than cut greens. Rinse only just before serving.
